• 1 (20 ounce) can young green jackfruit in brine, drained and rinsed,1 tbsp olive oil,1 tsp smoked paprika,1/2 tsp cumin,1/4 tsp chili powder,1/4 tsp garlic powder,Salt and pepper to taste,1 tbsp olive oil,1/2 yellow onion, finely chopped,2 cloves garlic, minced,1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained,1 (8 ounce) package vegan cream cheese,1 cup shredded vegan mozzarella cheese,1/2 cup kimchi, chopped,2 tbsp kimchi juice,Fresh cilantro, chopped, for garnish,Air fryer safe skillet or baking dish

Step 1. Preheat air fryer to 400°F (200°C).,Prepare Jackfruit Carnitas: Shred jackfruit with two forks. In a bowl, toss jackfruit with 1 tbsp olive oil, smoked paprika, cumin, chili powder, garlic powder, salt, and pepper.,Air Fry Jackfruit: Spread jackfruit in a single layer in the air fryer basket. Air fry for 10-12 minutes, or until slightly crispy, shaking halfway through.,Sauté Aromatics: While jackfruit is air frying, heat 1 tbsp olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.,Combine Ingredients: Stir in the diced tomatoes and green chilies, vegan cream cheese, and shredded vegan mozzarella cheese. Cook, stirring occasionally, until the cheeses are melted and smooth.,Add Kimchi: Stir in the chopped kimchi and kimchi juice. Cook for another 2-3 minutes, until heated through.,Assemble and Bake (Optional): Transfer the mixture to an air fryer safe skillet or small baking dish. Top with the air-fried jackfruit carnitas.,Air Fry or Bake: Air fry at 350°F (175°C) for 5-7 minutes, or until bubbly and slightly browned.
